香酥虾

用料:
1:冰冻带壳虾600克(最好是白虾,皮薄),去肠洗净沥水备用。
2:绍酒1大匙,白胡椒粉1/8茶匙,盐3/4茶匙,葱1条切段,姜2片。
3:生粉2大匙。
4:菜油1大匙,葱花2茶匙,蒜蓉1.5大匙,熟芝麻1.5大匙。
5:菜油1杯。
做法:
洗净沥水后的虾加上2料拌匀腌30分钟。然后捡出葱段和姜片,将多余的腌汁泌去,再用纸巾将虾擦干。接着拌入生粉2大匙。大炒锅内放菜油1杯置炉上,开大中火油热后,分三次放入虾煎炸成金黄色捞出沥油。炸油弃去,原锅洗净加菜油1大匙置炉上开中火,放入蒜蓉炒至焦香,再加葱花炒干香,接着倒入炸好的虾和熟芝麻兜匀出锅,乘热吃。
外香酥里嫩,可以连壳一起吃。
