【口水鸡】

这个口水鸡会让你吃不停口噢。渥太华不容易买到三黄鸡,这个菜,我喜欢小母鸡,肉质比较鲜美。

用料:
1:小母鸡(Conish hen)1只1000克,或三黄鸡1只1000克;
2:1条葱洗净切段,姜片3-5片,花椒粒1茶匙,料酒1大匙,盐1.5茶匙;
3:橄榄油1大匙,葱花1大匙,蒜蓉1大匙,姜蓉1茶匙,辣椒粉1茶匙,花椒粉1/2茶匙
4: 冷开水3大匙,头抽酱油1大匙,镇江香醋1茶匙,糖1茶匙,盐1茶匙,香油2茶匙,辣油2大匙
5: 白芝麻1大匙,花生碎1.5大匙,葱花1茶匙
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、大锅,置炉上开大火,放大半锅水和2料(图1)烧开,放入小母鸡(图2),立刻转小火盖上盖(图3)焖煮25分钟。
2、用一干净大盆放入大半盆冰与水,捞出煮好的鸡沥水后放入冰水里(图4)静置10分钟。

3、 不粘锅加油1大匙,置炉上开中火,放入3料里的葱花,蒜蓉和姜末(图5)炒30秒,再放花椒粉和辣椒粉炒20秒离火(图6)。将调味4料倒入葱姜蒜里,拌匀待用。
4、小号不粘锅放入芝麻小火炒熟(图7)。鸡斩块(图8),放入一盘中,将做法3里的汁浇在鸡块上,再撒上芝麻,花生碎和葱花拌匀开吃吧。
