【口水鸡】

这个口水鸡会让你吃不停口噢。渥太华不容易买到三黄鸡，这个菜，我喜欢小母鸡，肉质比较鲜美。
用料:
1：小母鸡（Conish hen）1只1000克，或三黄鸡1只1000克；
2：1条葱洗净切段，姜片3-5片，花椒粒1茶匙，料酒1大匙，盐1.5茶匙；
3：橄榄油1大匙，葱花1大匙，蒜蓉1大匙，姜蓉1茶匙，辣椒粉1茶匙，花椒粉1/2茶匙
4: 冷开水3大匙，头抽酱油1大匙，镇江香醋1茶匙，糖1茶匙，盐1茶匙，香油2茶匙，辣油2大匙
5: 白芝麻1大匙，花生碎1.5大匙，葱花1茶匙
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、大锅，置炉上开大火，放大半锅水和2料（图1）烧开，放入小母鸡（图2），立刻转小火盖上盖（图3）焖煮25分钟。
2、用一干净大盆放入大半盆冰与水，捞出煮好的鸡沥水后放入冰水里（图4）静置10分钟。
3、 不粘锅加油1大匙，置炉上开中火，放入3料里的葱花，蒜蓉和姜末（图5）炒30秒，再放花椒粉和辣椒粉炒20秒离火（图6）。将调味4料倒入葱姜蒜里，拌匀待用。
4、小号不粘锅放入芝麻小火炒熟（图7）。鸡斩块（图8），放入一盘中，将做法3里的汁浇在鸡块上，再撒上芝麻，花生碎和葱花拌匀开吃吧。
