【皇子菇炒虾仁】

我们家老爷喜欢皇子菇做到菜,在华人超市买到很形象的皇子菇,做了这个皇子菇炒虾仁,很受欢迎。虾我一般买Costco的冰冻虾,质量挺不错。

用料:
1:31/40大大冰冻白虾25粒,盐1/3茶匙,白胡椒1/8茶匙,生粉2茶匙,香油1/3茶匙;
2:皇子菇一包400克;
3:橄榄油1.5大匙;葱花1大匙,蒜蓉1茶匙,姜片1小片;
4:盐1/4茶匙, 头抽酱油 1大匙, 鸡粉1/6茶匙;
5:香油 1/2茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、冰冻虾放入半池冷水中解冻(图1),去壳去肠泥洗净。沥水后放一碗里,加剩余1料(图2)拌匀腌20分钟待用(图3)。
2、皇子菇去根洗净切片(图2)待用(图2)
3、 不粘锅置炉上开大中火,加1大匙橄榄油,放入虾仁(图5)炒至刚刚熟,捞出待用,

4、原锅再加0.5大匙油,大中火,炒香放入葱花,蒜蓉及姜片炒香(图6)。然后放入皇子菇片(图7),翻炒2-3分钟。加所有4料的调味料翻炒均匀。
5、最后放入先前炒好的虾仁(图8),炒匀,淋下香油 1/2茶匙,兜匀就可以出锅了。
