用料:
1:里脊肉(Pork loin)300克,盐1/3茶匙,生粉1.5茶匙,水1.5大匙,老抽酱油1茶匙;
2:雪豆160克,撕掉老筋,洗净切小段;
3:橄榄油2大匙,蒜蓉1大匙,豆豉1大匙斩蓉,姜丝1.5茶匙,葱花1大匙;
4:厨酒1茶匙,盐1/6 茶匙,水1.5大匙,糖1/2茶匙,蚝油1.5大匙;
5:香油1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、里脊肉洗净沥水,切薄片,放入剩余的1料(图1),用手抓捏均匀(图2),静置20分钟。
2、开大火将不粘锅烧热(大约1-2分钟),加1大匙橄榄油,立即放入肉片快速划散(图3),炒至八成熟捞出待用。

3、原锅置炉上开大火,加1大匙橄榄油,炒香剩余的3料(图4)。放入雪豆片翻炒几下,再下4料里的厨酒和盐炒匀(图5),然后放入剩余的4料翻炒几下。
4、然后放入肉片(图6)翻炒均匀,最后下1茶匙香油,翻炒兜匀出锅。
