简易【猪肉烧卖】

猪肉烧卖也是我们去中餐馆饮茶必点的一款，自己在家也可以做哈。
用料:
1：五花肉200克或猪肉馅200克；
2：荸荠8-9个，去皮洗净切小粒；
3：绍酒1茶匙，葱花1大匙，姜蓉1/2茶匙，盐1/4茶匙，糖1茶匙，生抽酱油1茶匙，老抽酱油1茶匙，李锦记旧庄特级蚝油 2茶匙，生粉1大匙，鸡粉1/6茶匙（没有的话可以不用），白胡椒粉1/8茶匙，香油1大匙，水1.5大匙。
4：馄饨皮12张。
注：1大匙Tablespoon=15毫升，1茶匙Teaspoon=5毫升，1杯Cup=240毫升。
做法：
1、五花肉洗净后，切丁斩碎放入盆里，加入所有的2料和3料（图1），然后用一双筷子顺一个方向搅拌，至馅粘稠上劲。
2、取一张馄饨皮，放1.5大匙肉馅（图2），拉起边缘捏紧，包成上端开口的烧卖坯（图3）。
3、蒸锅里放4杯水，置炉上开大火。烧卖底部垫上小块烤盘纸，放在笼屉上（图4），等水滚开后，将盛烧卖的笼屉放入蒸锅，再用大火蒸8分钟（图5）即可。
