【家常豆干小炒】

用料:
1:里脊肉120克, 生抽酱油 1茶匙,老抽酱油1茶匙,生粉1茶匙,水2茶匙;
2:五香豆干一包350克;
3:胡萝卜1小根110克;
4:辣的青辣椒1个30克;
5:橄榄油2.5大匙;葱花1大匙,姜丝1.5茶匙,蒜蓉1大匙;
6:盐2/3茶匙,白胡椒1/8茶匙, 生抽酱油 1大匙,头抽酱油1大匙, 鸡粉1/6茶匙;
7:香油 1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、里脊肉洗净切丝,加上剩余1料(图1),拌匀用手抓捏1-2分钟,再腌15分钟。如果能提前一天准备,放冰箱腌过夜的话,肉会更嫩。豆干最好买比较软的那种,洗净薄片。胡萝卜去皮洗净切丝(图2),青辣椒去籽洗净切丝(图3),待用。
2、 不粘锅置炉上开大火,加1大匙橄榄油,放入肉丝(图4)炒至肉丝刚熟捞出。原锅加1.5大匙有,放入5料里葱花,姜丝和蒜蓉(图5)炒香,放入豆干炒2分钟,放入然后放入1/2杯冷水(图6),煮至汁干。

3、放入所有6料的调味料,及胡萝卜丝,翻炒约1分钟哦,然后后放入青椒丝(图7)翻炒均匀。
4、放入肉丝,淋下香油 1茶匙(图8),兜匀就可以出锅了。
