【糯米肉烧卖】

去朋友家聚餐，做了这个糯米肉烧卖，大受欢迎。考虑到北方人不喜甜，蹄膀肉里糖少放了些。留了几个给毛毛，他吃过后要求再做。我就买了好几斤蹄膀，接连做了两批冻起来，每天早餐热来吃。他习惯是将最好的留在最后，吃烧卖时双手捧着，神情专注，享受极了。
用料:
烧卖馅：
1：糯米1.5杯，水1.5杯；
2：去骨蹄膀肉500克，洗净沥水备用；
3：绍酒1大匙，万字牌生抽酱油2大匙，头抽酱油 1.5大匙，糖1/2茶匙，盐1/2茶匙；
4：葱1条切段，姜片3片，桂皮一小块，八角一粒，丁香2粒；
5：干香菇8朵，洗净后用温水泡发，切小粒；
6：橄榄油2大匙，葱花3大匙，糖1/2茶匙，盐2/3茶匙，老抽酱油1.5大匙，鸡粉1/4茶匙；
烧卖皮：
7：中筋面粉（All purpose flour）2杯（320克），没过筛；
8：开水1杯（235克），冷水1大匙，菜油2茶匙。
做法：
1、糯米饭: 小锅加水1.5杯，置炉上开大火煮滚水，然后放入淘洗过的糯米1.5杯，搅拌一下，避免粘底。改小火焖35分钟，糯米饭就好了（图1）。
2、红烧蹄膀：蹄膀肉放开水里烫2分钟（图2），沥水冲洗干净。肉放入电压力锅内胆里，然后放入所有3和4料（图3），加盖选【手动Manual】档38分钟，启动程序。完成程序后，等5分钟，放气减压打开盖（图4），选【煎炒Sauté】档，收汁到1/4量。将蹄膀肉切碎待用。
3、不粘锅，置炉上开大中火，放油2大匙，油热时放入葱花炒香（图5）。然后放入香菇丁（图6）炒1分钟，倒入糯米饭拌炒几下（图7），然后放烧好的蹄膀肉丁与剩余的6料，拌炒匀即是糯米肉馅了（图8）。
4、烧卖皮：用筷子边搅边将8料里的开水倒入7料面粉里（图9），继续搅拌到成团（图10）。加1大匙冷水，和成软面团。接着倒入2茶匙菜油，将面揉至非常均匀（图11），盖上湿布醒30分钟。
5、烧卖：把醒好的面团分成24份，每份擀成中间厚边缘薄的皮，上面放2大匙馅料（图12），拉起边缘均匀叠折，在靠上端三分之一处捏紧，包成烧卖坯（图13）。底部垫上小块烤盘纸，放入蒸锅内（图14），水滚后大火蒸7-8分钟即可。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
