【云石汤圆】

自从在我们村能买到紫薯，它成了我们家餐桌上的常客啦，做杂粮粥、面包和中式点心都用得到它。这次用紫薯来做云石汤圆，色彩漂亮又香甜好吃。
黑芝麻馅：
1：熟黑芝麻1/4杯（27克），红糖2大匙（18克），生粉1大匙（9克），
2：玉米油1.5茶匙，蜂蜜1.5大匙；
面团：
3：紫薯半个95克（削去皮后是80克），水2大匙；
4：糯米粉1/3杯（47克），温水1/4杯（60克）；
5：糯米粉1杯（141克），温水1/2杯（120克）；
酒酿汁：
6：酒酿1杯（做法见零失败做【甜酒酿】），水4杯，糖1/4杯。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、将买来的熟黑芝麻放一塑料袋里，封口后用擀面杖将芝麻碾碎（图1）。碾碎的芝麻连同1料里的红糖和生粉放入一碗中先拌匀，然后放入2料里的油和蜂蜜（图2），用勺子拌匀（图3），分成12等份待用。
2、紫薯去皮后切小块，加2大匙水，盖上保鲜膜（图4），在微波炉里叮2-3分钟至熟。用勺子碾碎紫薯，然后放入4料（图5），揉成紫薯面团（图6）。
3、所有5料放一小盆里，揉成白面团（图7）。案板上放一张保鲜膜，将白面团揉成长20厘米的长条，放到保鲜膜上。再盖上另一张保鲜膜，用擀面杖擀成15厘米宽的长方形（图8）。
4、将紫薯面团也擀成同样大小的长方形（图9），然后揭掉上层保鲜膜，轻轻将紫薯面片放到白面片上（图10）。隔着下层保鲜膜，小心将面片从下往上卷成长条（图11、12）。
5、去掉保鲜膜后切成12等份（图13），每份在案板上压扁后，用手指捏出凹槽。放入1份黑芝麻馅（图14），封口包紧成球状，两手轻轻揉成光滑的汤圆（图15）。
6、中号锅内放入大半锅水，开大火煮至滚。将包好的汤圆放入锅内（图16），水滚后，关小火再煮8-10分钟。另起一小锅放入所有6料，开大火煮至滚（图17）。再用小火煮5分钟后，捞出汤圆放入酒酿汁即可（图18）。
