【凉拌藕片】

很难在这边买到上好的藕,这次买的还不错,藕身清甜多汁。家里来了几位客人,做了这个凉拌藕片,在各样荤素菜中,它很受欢迎。

1:藕2节740克去皮洗净,盐2/3茶匙;
2:干黑木耳10克,用水泡发后洗净待用,盐1/4茶匙;
3:橄榄油1大匙,花椒1茶匙,葱花1大匙,姜丝1茶匙;
4:葡萄醋(balsamic vinegar )1.5茶匙,盐1/4茶匙,糖1/2茶匙,鸡粉1/4茶匙,红油1大匙,剁椒1大匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、藕去皮洗净对半切开后,切薄片(图1)。用一大锅注入大半锅水,置炉上开大火煮滚。下一半量的藕片(图2)烫30秒,捞出藕片放入盛八分满冷水的盆里(图3)。重复另一半藕片,沥水后将2/3茶匙的盐拌入藕片中(图5),放入冰箱冷藏2-3小时。
2、黑木耳也放入烫藕片的水锅中煮3-5分钟(图4),捞出冲冷水后沥水。将1/4茶匙的盐拌入煮好的黑木耳里(图6),放入冰箱冷藏2-3小时。

4、将葱姜油倒入藕片上,放入黑木耳,及所有调味料4料(图9),拌匀后就可以上桌食用了。
