【土豆烧蹄膀】

这个土豆烧蹄膀当天煮好就很美味，第二天带便当就更入味下饭。儿子毛毛一顿能吃很多块。
用料：
1：去骨蹄膀肉1100克，切成小块，洗净待用；
2：小土豆7个300克，去皮洗净待用；
3：橄榄油1大匙，葱1根切段，姜10克切片，八角1粒，丁香2粒，红糟 1大匙（没有红糟可以用酒酿或厨酒代替）；
4：镇江香醋1茶匙，糖1.5茶匙，万字牌生抽酱油2大匙，草菇老抽酱油1大匙，头抽酱油1大匙，盐1/3茶匙；
5：橄榄油1大匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、电压力锅按【煎炒 Sauté】键，选高温档，放入蹄膀肉，然后注入大半锅开水，烫3-5分钟（图1），捞出用冷水冲洗干净待用。
2、将电压力锅内胆洗干净，按【煎炒 Sauté】键，选高温档，放橄榄油1大匙，炒香葱姜、八角和丁香（图2）。放入红糟（图3）炒半分钟，然后放入洗净的蹄膀（图4）翻炒1-2分钟。
3、依次放入所有4料拌匀（图5），盖上盖子，排气阀放置密封位置，按【手动档 Manual】键，时间设置为35分钟，程序会自动启动。
4、趁着烧蹄膀的空档，将小土豆切为4等份（图6），冷水冲洗后沥水。不粘锅加1大匙油，置炉上开大火，放入土豆块（图7），四面煎黄后（图8）捞出。
5、电压力锅完成程序后，等3-5分钟，放气减压打开盖子（图9），捞出蹄膀肉放入碗里保温。压力锅再按【煎炒 Sauté】键，放入煎好的土豆块与肉汁同煮7-8分钟至汁浓稠（图10）。最后将煮好的蹄膀肉倒回锅里，轻轻拌匀即可出锅食用。
