【家常炒米粉】

中国南方盛产稻米,许多地方都有当地特色的米粉菜肴。LG小时候在福州外公外婆身边长大,经常回忆起外婆做的福州炒米粉还有江西米粉干。
今天做的这个炒米粉做晚餐,挺好吃的。爱吃辣的拌上点辣椒酱可以吃上两碗。

1:猪里脊肉300克,盐1/2茶匙,生粉1大匙,水2大匙,老抽酱油2茶匙;
2:细的干米粉一包200克;
3:干香菇10粒,黑木耳一把(8克),干虾米2大匙,分别在水中泡软洗净待用;
4:胡萝卜1小根50克,去皮洗净待用;
5:小青菜菜心400克,洗净切段待用;
6:橄榄油3大匙,葱花2大匙,蒜蓉1大匙,姜丝1茶匙;
7:鱼露1.5大匙,盐1茶匙,万字牌生抽酱油1.5大匙,头抽酱油1大匙,鸡粉1/4茶匙,十三香粉或白胡椒1/6茶匙;
8:香油2茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、提前一天晚上将猪肉切丝,拌上所有剩余的1料,用手抓捏均匀(图1),保湿放冰箱过夜。
2、米粉用开水浸泡30分钟(图2),沥干水待用。
3、青菜心洗好切段,胡萝卜切片,香菇黑木耳切丝。不粘锅置炉上开大中火,加2大匙橄榄油,放入肉丝(图3)炒至八成熟,捞出待用。

5、倒入炒好的肉丝(图8),翻炒均匀。关火后放入2茶匙香油拌匀即可。
