【糊涂鸡】

因为自己做了剁椒，所以尝试了这个川菜糊涂鸡，用了文学城里宝煲的煮鸡方法，皮很Q，鸡肉很嫩。糊涂鸡很美味啊，大家一定要试试。
1：鸡一只1450克，最好是用国内的三黄鸡，可惜俺村没有这个;
2：葱一条切段，姜10克切片；
3：冷水10杯，盐2大匙，冰块2杯；
4：橄榄油1大匙，蒜蓉1大匙，葱花1大匙，姜末2茶匙，花椒粉1/3茶匙；
5：剁椒2大匙，镇江香醋2茶匙，盐1茶匙，糖1茶匙，辣椒油1大匙，头抽酱油1大匙，鸡粉1/6茶匙，冷开水2大匙，香油1茶匙。
注：1大匙=15毫升=1 Tablespoon，1茶匙=5毫升=1 Teaspoon，1杯=240毫升。
做法：
1、大锅注入水至八分满，放入2料的葱姜，置炉上开大火煮滚。拎住鸡腿末端，将鸡浸入滚水中烫10秒钟，提起鸡，将锅盖放鸡下面接住滴下的汁水，然后放水池中用冷水冲凉。再将鸡浸入滚水中烫10秒钟，再冲冷水。然后将鸡放回滚水里（图1），盖上盖，调小火保持水微沸，焖煮30分钟。
2、将3料冷水和盐放入一大盆里搅拌均匀，然后放入2杯冰块，将煮好的鸡放入冰盐水里（图2）浸泡30分钟。
3、不粘锅加1大匙油，置炉上开大中火，炒香剩余的4料后（图3）离火。将剁椒斩碎（图4），连同炒香的葱姜蒜、花椒与所有5料拌匀成调味汁（图5）
4、鸡沥水后斩小块，浇上做好的调味汁，就可以上桌了。
