【苏式椒盐月饼】

苏东坡《月饼》诗：小饼如嚼月，中有酥和饴。默品其滋味，相思泪沾巾。中国人的团圆节-中秋节就快到了，它也是从前离家上大学时，独自度过的第一个节日，用一句流行的话来说：思念成了舌尖上的滋味。
这款苏式椒盐月饼里面放了各种果仁，很香很酥，喜欢苏式月饼的一定要试试。
椒盐馅：
1：低筋粉3/4杯（110克），细白糖1/4杯（53克），熟黑芝麻1/2杯（55克），熟葵瓜子仁1/4杯（38克），熟杏仁片1/4杯（22克），腰果1/4杯（32克）擀成碎粒，桔饼或杏干4个切碎，盐1/2茶匙，花椒粉1/3-1/2茶匙；
2：玉米油1/4杯（55克）；
水皮：
3：中筋面粉1杯（All purpose flour，160克），细白糖1大匙（14克）；
4：油酥（Lard）1.5大匙（22克），玉米油1.5大匙（16克），水1/3杯+2茶匙（88克）；
5：中筋面粉2茶匙；
油皮：
6：低筋面粉（Cake and pastry flour）1/2杯+3大匙（97克），玉米油1/4杯（53克）；
以上材料可以做12个苏式椒盐月饼。
其他：
7：食用红色素1/2茶匙。
注：1大匙=15毫升=1 Tbsp，1茶匙=5毫升=1 Tsp，1杯=240毫升。
做法：
1、椒盐馅：1料的面粉放入微波炉中加热1分钟，拿出搅拌几下，再加热45秒后拌匀。将所有1料放入一碗中，用叉子拌匀，然后放入2料拌匀（图1）。分成12等份，捏成小球（图2）。
2、水皮：将4料倒入3料中（图3），揉捏成均匀的软面团。如果面团粘手的话，再加5料的2茶匙面粉，揉成面团（图4），保湿静置20分钟。
3、油皮：将6料放一小盆中（图5），用勺拌匀成非常软的油皮（图6）。
4、手上和案板上稍涂点玉米油，然后将水皮分成12份。做的过程要用保鲜膜盖住其他的皮料保湿。取水皮一份擀成长圆形薄饼，将1/12量的油皮均匀抹在擀开的水皮上（图7），从下往上叠三褶（图8）。转90度擀开成长方形（图9），再从下往上叠三褶（图10），然后擀开成一薄的方形（图11），从左往右卷成小圆筒（图12），再从下往上团成小球状（图13、14），保湿静置松弛10分钟。压扁小球擀成圆饼，放上一个果仁椒盐馅（图15），仔细收口捏好粘住（图16）。翻转180度收口向下，用手稍稍压扁（图17）。
5、做好的月饼放入铺了烤盘纸的烤盘里（图18），用筷子沾少量红色素在饼面上点3个圆点。放入预热至375F/190C的烤箱，烤20-22分钟。稍凉后就可以吃了。
