【葡萄干奶香小面包】

上次做了蜂蜜小面包，大家都很喜欢。毛毛说：“里面为什么没有馅？也不够甜。”今天又做了一盘，里面加了葡萄干和奶香馅，好好吃噢，亲们要试试。
面团：
1：鸡蛋1只，牛奶1/2杯再减1大匙（105克），白糖4大匙（55克）；
2：中筋面粉1又2/3杯（266克），面筋粉（wheat gluten）1.5大匙（14克），泡打粉1/2茶匙；
3：快速发酵粉（fast rising yeast） 1.25茶匙；
4：玉米油1.5大匙；
奶香馅料：
5：牛油4茶匙（20克），中筋粉2大匙，炼乳1大匙，糖粉3大匙，香草香精1/2茶匙；
6：葡萄干2大匙；
底部沾料：
7：白糖1.5茶匙，中筋粉1.5茶匙，白芝麻1.5茶匙；
其他：
8：蛋黄一个，水2茶匙，打散拌匀成蛋液；
用具：
9寸圆形烤模（最好是不粘烤模）。
以上材料做16个葡萄干面包卷。
注：1大匙Tablespoon=15毫升，1茶匙Teaspoon=5毫升，1杯Cup=240毫升。
做法：
1、发面：先将1料放入面包机里，将所有2料混合均匀，也放入面包机内，最后放入3料发酵粉（图1），面包机放至揉面档，启动。当面包机开始启动，刚刚和成面团时，打开盖子，加入4料玉米油，继续揉面过程。
2、奶香馅料：将5料里的牛油放入小碗，微波加热熔化，然后放入所有剩余5料（图2），用一小勺拌匀（图3）。
4、所有7料放一小碗中混合均匀。将每个面卷从中间一切两半（图8），切开的面卷的底部先沾水，再沾一下沾料（图9）。将沾好料的面卷等距离均匀的摆放入烤模（最好用不粘烤模），外圈放11个，内圈5个（图10）。
6、烤箱预热至350F/175摄氏度，温度达到后等几分钟，再将面包放入烤箱里烤15-17分钟，至表面金黄（图12）。面包出炉后稍冷凉，就可以食用了，真是太好吃了。
1：吃不完的面包装在密封塑料袋里，放冰箱保存，吃的时候微波加热15秒左右。
2：由于加拿大的中筋面粉筋度高，所以我用它来做面包，再加上点面筋粉，吐丝情况很好，味道也很好。其他地区建议用高筋粉做。
