【蚕豆炖素鹅】

江南人对茭白竹笋蚕豆之类好像都有情结，毛毛爸和我看到了这类菜就是要买的。一大包的蚕豆居然只剥到1杯蚕豆仁，就和素鹅一起炖了，解馋的同时又想起国内的亲人。
1：素鹅一盒400克；
2：新鲜带荚蚕豆665克；
3：橄榄油1.5大匙，葱1条洗净切段，姜2-3片，蒜3-4粒拍碎，八角1粒，丁香2粒；
4：厨酒2茶匙，水3/4杯，盐2/3茶匙，糖1.5茶匙，头抽酱油 1茶匙，生抽酱油2茶匙，鸡粉1/4茶匙；
5：香油1/2茶匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、素鹅洗净沥水，切薄片（图1）。蚕豆剥去皮，蚕豆仁洗净待用（图2），那么多蚕豆只剥出1杯蚕豆仁。不粘锅加1.5大匙橄榄油，置炉上开大中火，炒香葱姜蒜（图3），再下八角和丁香炒匀。
3、开大火收汁后，放1/2茶匙香油，翻炒均匀即可。
