沙茶鸡块

用料:
1:鸡腿(Chicken drum stick)8只,800克(或直接用去骨鸡腿肉600克),洗净沥水剔骨,切小块。
2:万字牌生抽酱油2大匙,绍酒1大匙,白胡椒粉1/8茶,牛头牌沙茶酱1大匙,香油2茶匙,生粉1大匙。
3:万字牌生抽酱油1大匙,金兰老抽1大匙,糖1茶匙,水2大匙。
4:菜籽油2大匙。
5:葱1条洗净切段,姜3片。
6:香菜1棵,洗净取叶。
做法:
将鸡肉片拌上2料腌30分钟。不粘炒锅置炉上开大火,内放菜籽油2大匙,将腌好的鸡肉块放入划散炒至外皮稍有微黄,加入葱段和姜片及3料同炒1分钟,撒下香菜叶兜炒几下,即起锅装盘。这样炒出的鸡非常嫩滑。
