简单美味【里脊虾炒饭】

上个月去英国开会，餐馆里吃到一款炒饭虽然味道不错，居然要18英镑，够宰人的。今天如法炮制了这个炒饭，真的好吃哦。
1：米1.5杯，水1.75杯；
2：里脊肉200克， 生抽酱油 1茶匙，老抽酱油1茶匙，头抽酱油1茶匙，生粉1茶匙，水1大匙；
3：冰冻白虾8只，盐1/8茶匙，生粉1/2茶匙，白胡椒粉1/8茶匙，香油 1/4茶匙；
4：小胡萝卜1条（40克），青辣椒1/2个（20克）；
5：橄榄油2大匙；葱花2大匙，姜蓉1茶匙；
6：盐1/2茶匙， 鸡粉1/6茶匙，白胡椒1/8茶匙，头抽酱油1大匙；
7：香油1茶匙；
8：鸡蛋3只，油1大匙。
注：1大匙Tablespoon=15毫升，1茶匙Teaspoon=5毫升，1杯Cup=240毫升。
做法：
1、头天将米洗净沥水后连同1.75杯水放入电压力锅内胆里，盖上盖子，排气阀放置密封位置，选【米饭】档。程序完成后，等几分钟，打开盖子，将饭打散放入一盒子里，冰箱冷藏过夜。
2、里脊肉洗净切丁（图1），加上剩余2料（图2），拌匀用手抓捏1-2分钟（图3），再腌15分钟。如果能提前一天准备，放冰箱腌过夜的话，肉会更嫩。虾浸冷水中化冻，剥去皮洗净沥水，放一小碗水里，加剩余3料（图4）拌匀待用。胡萝卜刮去皮，洗净擦丝（图5），辣椒切细丁。
3、 不粘锅置炉上开大火，加1大匙橄榄油，放入肉丁和虾仁（图6）炒至肉丁和虾刚熟捞出待用。
4、原锅再加1大匙油，放入5料里葱花和姜蓉（图7）炒香，倒入胡萝卜丝和辣椒丁炒30秒（图8）。倒入冷饭炒匀（图9），调中火，加速有6料炒至米饭软身（图10）。
5、将先前炒好的肉丁和虾仁放入翻炒均匀（图11），淋下香油 1茶匙，炒匀出锅，分成3份。
6、另取一干净不粘锅，放入1大匙油，大中火，打入3个整只鸡蛋（图12）煎至底部焦黄，大白凝固即可，放煎好的鸡蛋放到炒饭上就可以了。炒饭配上嫩鸡蛋，滋味绝妙。
