【素馅青团】

上次回国买了艾草粉带回来，做了素馅的青团，虽然卖相不好，但挺好吃的哈。
用料:
馅：
1：牛油果油 或其他油2茶匙，鸡蛋1个加盐1/4茶匙打散备用；
2：五香豆腐干1块（60克）；
3：小香菇6朵；
4：虾皮2大匙；
5：牛油果油1大匙，葱花2大匙，姜末1茶匙，盐1/3茶匙，十三香粉或白胡椒粉1/6茶，头抽酱油2茶匙；
6：香油 1茶匙；鸡粉1/4茶匙，生粉1茶匙；
皮：
7：糯米粉1.25杯（160克），艾草粉2大匙（8克）；
8：开水1/4杯（60克），冷水5大匙（75克）；
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、香菇提前泡软，洗净切碎丁，豆干也切碎丁（图1）。平底煎锅加2茶匙油，中火倒入1料打散鸡蛋（图2），煎成蛋皮，切碎丁待用。
2、再加1大匙油到锅里，中火炒香葱花姜末（图3），放香菇碎，豆干碎，虾皮（图4）炒1-2分钟，加剩余5料炒匀盛出。再放入蛋皮及6料拌匀成馅待用。
3、糯米粉加艾草粉（图5）拌匀，先加开水60克拌匀再放冷水和成软硬适中的面团（图6），分成12份。取一份面团用手稍揉几下，用手捏出凹槽，加1大匙馅（图7），封口包好，放在铺了烤盘纸的蒸笼里（图8）。
4、水开后上锅蒸10分钟即可。
