【芦笋鲜肉月饼】

中秋佳节吃芦笋鲜肉月饼应景.祝亲们核价团团圆圆, 健康快乐.
用料:
水皮：
1：中筋面粉3杯（all purpose flour，480克）；
2：牛油果油 9大匙（96克），水1杯+2.5大匙（280克）；
油皮：
3：低筋面粉（cake & pastry flour）2杯-2大匙（280克），牛油果油3/4杯（150克）；
馅:
4：瘦肉馅500g；
5：生粉2茶匙，盐3/4茶匙，鸡粉 1/2茶匙，花椒粉1/4茶匙，香油1大匙，头抽酱油1.5大匙，生抽酱油1.5大匙, 李锦记红油豆瓣酱1大匙，水6大匙；
6：葱2根洗净切葱花, 姜一小块5克切末.
7：芦笋230克；
注：1大匙=15毫升=1 Tbsp，1茶匙=5毫升=1 Tsp，1杯=240毫升。以上材料可以做30个酥皮月饼。
做法
1、水皮：将1-2料放一盆里，揉成均匀的软面团(稍微有点粘手), 盖上保鲜膜保湿静置10分钟, 再揉几下成光滑面团(图1). 盖上保鲜膜保湿.
2、油皮：将3料放一小盆中, 用勺拌匀成软的油皮(图2)，待用。
3、馅: 将所有4-6料放入一小盆里(图3)，用筷子顺一个方向搅拌至馅上劲.芦笋用刨刀削去外皮, 冲洗沥水, 切成细丁(图4). 将芦笋细丁放入肉馅里(图5), 再拌匀即可(图6).
4、将油皮分成30小份(图7), 水皮面团也分成30小份(图8). 做的过程要用保鲜膜盖住其他的皮料保湿。取水皮一份擀成圆饼, 放上一个油皮(图9), 包成圆球(图10). 依次做好其他29个.
5、压扁轻轻擀开成长圆形(图11),卷成圆筒(图12), 依次做好其他29个. 再擀开成(图13) 再卷成圆筒(图14). 依次做好其他29个, 做的过程要用保鲜膜盖住其饼皮保湿。
6、压扁圆柱擀成直径12厘米圆饼, 放上1.5大匙馅(图15), 收口包好, 然后翻转放案板上, 稍微压下成圆饼状. 依次做好其他的月饼.
7、月饼可以放不粘锅(图16), 小火煎至两面金黄. 月饼可以用烤箱400F烤18-20分钟(图17)至微黄。
8、做好的鲜肉月饼稍冷就可以吃. 依次做好下一批.
爱心分享：鲜肉月饼可放入密闭盒子，放在冰冻箱储存。吃的时候从冰冻箱拿出，用微波炉加热30秒后，再放入350F/175摄氏度烤箱里烤5分钟，晾凉后食用，酥香咸鲜
