【豆干炒鸡片】

Costco的有机鸡胸肉挺不错的, 做法得当, 鸡肉也非常嫩, 很入味, 很受领导的欢迎.

1:鸡胸肉1块200克, 盐1/4 茶匙, 生粉2茶匙;
2:五香豆干1包(300克);
3:牛油果油 或其他素油1.5大匙, 葱一根, 蒜瓣2瓣去皮;
4: 头抽酱油1大匙, 生抽酱油1大匙, 黑胡椒粉1/6茶匙, 鸡粉1/6茶匙, 水1/4杯.
5: 蚝油1大匙, 香油1茶匙.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、豆干洗净切片(图1). 鸡胸肉洗净沥水后切片, 用手抓捏2分钟,这样肉会很嫩(图2), 加上剩余1料,拌匀静置15分钟。葱去根洗净去切葱花, 蒜瓣切碎待用.
2、葱去根洗净切葱花. 蒜瓣去皮拍碎待用.

3、不粘锅,置炉上开大中火,加牛油果油1大匙先,放入鸡胸肉炒1-2分钟至8层熟(图3), 捞出锅. 锅里再加1/2 大匙油, 炒香葱花蒜瓣(图4), 放入豆干片(图5)炒1分钟. 然后放入4料(图6), 调小火盖盖煮2分钟(图7).
4、打开盖子, 调回大中火, 放入鸡片料 (图8), 和所有5料,炒拌均匀, 鸡肉断生出锅。鸡肉鲜嫩,很好吃.
