【豆腐虾丸】

非常美味, 健康又营养的菜. 虾丸嫩豆腐鲜美, LD非常喜欢.

材料:
1: 老豆腐一盒700克;
2: 金钱香菇15朵;
3:大号的冰冻白虾1包(454克);
4: 葱花2大匙, 姜茉1茶匙, 盐1/2茶匙, 白胡椒粉1/6茶匙, 生粉2茶匙, 香油2茶匙, 头抽酱油1大匙;
5:牛油果油 或其他素油1.5大匙,葱花1大匙, 新鲜蒜蓉2茶匙, 红油豆瓣酱1大匙;
6: 盐3/4茶匙, 头抽酱油1大匙, 鸡粉1/4茶匙, 水1杯;
7: 葱花1茶匙, 香油1茶匙.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、香菇提前泡软洗净待用(图1). 冰冻白虾放冷水中泡软(图2),剥去皮后抓捏洗净切细丁,然后斩成茸。虾茸和所有3料放入盆中(图3),用一勺子顺一个方向搅拌至少80下,至馅上劲(图4), 豆腐冲洗后切1厘米大小方块(图5)。

2、不粘锅,置炉上开大中火,加牛油果油1.5大匙,油稍热, 放入葱花,姜茉, 豆瓣酱(图6), 我用这个豆瓣酱味道不错(图7), 翻炒30秒, 然后下放入香菇翻炒20秒, 再放入豆腐(图8)轻轻翻炒几下.

3、放入所有6料炒匀 (图9),盖盖中火煮5分钟. 打开盖子, 炒几下, 将豆腐铲到一边, 快速用小勺舀出大约2茶匙鲜肉馅,右手持勺,与左手掌配合搓成直径1.5厘米大小的丸子放入锅里(图10), 盖盖中火煮2分钟(图11).
4、打开盖子, 撒上葱花及1茶匙香油(图12), 兜匀出锅.
