【里脊虾仁酥皮角】

大家一定要试试这个酥皮点心，皮酥馅咸鲜美，非常受领导们的欢迎。
1：里脊肉250g；
2：生粉1大匙，盐1茶匙，鸡粉 1/6茶匙，白胡椒1/6茶匙，香油1.5大匙，头抽酱油1大匙，糖1/6茶匙，水2大匙；
3：中号冰冻白虾18个；
4：葱花2大匙，姜末1茶匙；
水皮：
5：中筋面粉1杯（all purpose flour，160克）；
6：油酥（lard）1.5大匙（21克），玉米油1.5大匙（16克），水6大匙（90克）；
油皮：
7：低筋面粉（cake & pastry flour）1/2杯+2.5大匙（95克），玉米油1/4杯+1茶匙（56克）；
其他：
8：鸡蛋黄1个加水2茶匙匙打散备用.
注：1大匙=15毫升=1 Tbsp，1茶匙=5毫升=1 Tsp，1杯=240毫升。以上材料可以做12个里脊虾仁酥皮角。
做法：
1、里脊肉洗净切小粒（图1），放入一小盆里，加入2料（图2），用手抓捏几分钟。白虾放冷水里化冻，去皮洗净沥水切小粒，也放到肉丁的盆里，放入3料（图3），用一勺顺一个方向搅拌至馅上劲（图4），待用。
2、水皮：将6料倒入5料中（图5），揉捏成均匀的软面团（图6），盖上保鲜膜保湿静置20分钟。
3、油皮：将7料放一小盆中（图7），用勺拌匀成非常软的油皮（图8），待用。
4、手上和案板上稍涂点玉米油，然后将水皮面团分成12小分份。做的过程要用保鲜膜盖住其他的皮料保湿。取水皮一份擀成长圆形薄饼，将大约1/12量的油皮（大约1.5茶匙）均匀抹在擀开的水皮上（图9），两端叠向中间三褶（图10）。
5、转90度擀开成长方形（图11），再将两端叠向中间三褶（图12），然后擀开成一薄的长方形（图13），从左往右卷成圆筒（图14），再从下往上团成小球状（图15），保湿静置松弛10分钟。
6、压扁小球擀成圆饼（图16），放上2大匙虾肉馅（图17），对折捏紧边（图18），然后打花边（见视频）成酥皮角坯（图19）。依次做好所有的酥皮角。
7、做好12个酥皮角放入铺了烤盘纸的烤盘里，刷上蛋液（图20），放入预热至375F/190摄氏度的烤箱里烤22分钟。如果上色不好，开上火低档（Broil Low）1到2分钟即可。各家的烤箱不同，注意温度及时间。烤好取出稍冷后，就可以吃了。
爱心分享：酥皮角可放入密闭盒子，放在冰冻箱储存。吃的时候从冰冻箱拿出，用微波炉加热40秒后，再放入350F/175摄氏度烤箱里烤7分钟，晾凉后食用，酥香咸鲜。
