香酥鸡腿

用料:
1：鸡腿5个600克。
2：盐2茶匙，花椒1大匙，桂皮1小块。
3：绍酒1大匙，葱1条洗净切段，姜片3片。
4：面粉1/4杯，生粉1/4杯。
5：菜籽油3大匙。
做法：
小锅置炉上开中小火，放入2料炒至盐微黄备用。鸡腿洗净小心从上端用刀划开剔去骨头，注意不要弄破皮，将鸡腿肉翻转朝外然后加入炒好的花椒盐拌匀冰箱中腌一天。
将腌好的鸡腿用水冲去花椒粒，接着将鸡腿肉翻转过来皮朝外上盘加上3料，上笼大火蒸15分钟，冷凉待用。取一塑料袋放入面粉和生粉拌匀，然后放入蒸好的鸡腿肉，封紧袋口抖一抖。将裹了面粉的鸡腿肉抖掉多余的面粉后，放入煎锅煎成两面黄，捞出切块即可食用。喜欢口味重的可以配点炒好的椒盐。也可以用番茄酱做沾汁。
