12345-高升排骨

简单易做，宴客自吃两相宜。12345是指用的调料是依次增加，非常容易记住这个菜谱。
用料:
1：猪肋排850克，温水洗净，沿骨缝切块备用；
2：油1大匙，葱两条洗净切段，姜片3-5片；
3：镇江香醋1大匙，糖2大匙，料酒3大匙，万字牌生抽酱油3大匙加金兰老抽1大，水5大匙。
做法：
1. 排骨沿骨缝切开，开水里烫煮1-2分钟（图1），沥水冲洗干净。
2. 高压锅，置炉上开大火，放入橄榄油1大匙，炒香2料里的葱段和姜片（图2），然后放入排骨和所有3料（图3）。
3. 盖上盖，上汽后调中小火，压25分钟（图4），冷10分钟后，放气打开锅（图5）。
4. 捞出排骨放到一碗中，高压锅留汁，置炉上开大中火收汁（图6），等差不多汤汁剩有三分之一离火，将浓汁浇到排骨上就好啦。
