最近在Costco买的蓝莓很新鲜。去朋友家吃饭带了这个蓝莓方块酥,很受欢迎,亲们也试试吧。

用料:
糕底(面):
1:中筋面粉1又1/4杯(200克),白糖1/2杯(108克),泡打粉1/2茶匙,柠檬皮屑1茶匙;
2:牛油1/2杯(120克),切小块;
3:特大鸡蛋黄1个,香草香精1茶匙;
馅:
4:新鲜蓝莓2杯,鲜榨柠檬汁1大匙;
5:面粉2大匙,白糖1/4杯(57克);
其他:
22×22厘米方形玻璃烤盘。

1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。

做法:
1、将所有1料放一盆里(图1)拌匀,放入切成小块的牛油(图2),用手将面粉抓捏到油里成肉馅样(图3),注意不要揉捏过度。将蛋黄和香草香精放入小碗中打散拌匀(图4),然后均匀倒入面粉牛油混合物里(图5),用叉子拌匀成糕底粉。

2、22×22厘米玻璃烤盘喷点防粘油PAM,倒入步骤1中的糕底粉的2/3份量,用叉子均匀摊平(图6)待用。

3、将新鲜蓝莓洗净沥水放一盆中,加1大匙柠檬汁上下颠簸均匀。然后放入5料中的面粉(图7),颠簸均匀。再放1/4杯糖(图8),同样颠簸均匀。

4、预热烤箱375F/190摄氏度。将拌好的蓝莓均匀铺到糕底上(图9)。将剩余1/3的糕底粉均匀撒在蓝莓上(图10).

5、烤盘放入预热至375F/190摄氏的烤箱内,烤37分钟左右至表面金黄色拿出。如果上色不理想,开Broil低档1-2分钟即可。

6、烤好的蓝莓方块酥在烤盘里冷凉20分钟后,切块装盘,如果配上冰激凌就更是好享受。
