【腐乳红糟扁豆】

上次毛毛爸带回来的红糟,做了几次红糟肉或鸡,大家都很喜欢。今天做了这个素扁豆,红腐乳和红糟搭配,也非常好吃哈。

用料:
1:扁豆820克;
2:橄榄油1.5大匙,葱花2大匙,姜2-3片,红糟2茶匙;
3:红腐乳1块(30克),1大匙腐乳汁;
4:盐1/3茶匙,糖1大匙, 生抽酱油 1大匙,头抽酱油1大匙,老抽酱油1大匙,水2/3杯;
5:香油 1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、扁豆摘去两头,洗净(图1)切寸段(图2)。 不粘锅置炉上开大中火,加1.5大匙橄榄油,放入葱花、姜片及红糟炒香(图3),下扁豆翻炒1分钟(图4)。
2、将3料的腐乳碾碎连同腐乳汁依(图5),倒入锅里。然后加入4料(图6),煮至汁浓扁豆软身。

3、打开锅盖收汁,煮至汁浓(图7)。淋下香油 1茶匙,兜匀就可以出锅了。
