【芹菜鸡丁】

挺喜欢CostCo的有机鸡胸肉, 加点嫩芹菜, 炒一炒, 芹菜脆鸡丁嫩, 很好吃.

用料:
1: 中国芹菜450克;
2:有机鸡胸肉1块175克, 盐1/4 茶匙, 生粉1茶匙, 白胡椒粉1/8茶匙, 香油1/4茶匙;
3: 橄榄油4茶匙, 葱花1大匙, 蒜蓉1茶匙, 麻辣锅酱1茶匙;
4: 头抽酱油1茶匙, 李锦记蚝油1大匙, 糖1/4茶匙, 水2大匙;
5: 香油 1/2茶匙.
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法
1、芹菜去跟去老叶, 洗净切1厘米段(图1). 鸡胸肉洗净沥水后切0.8厘米大小的丁. 用手抓捏1分钟, 放入剩余1料拌匀(图2)待用.

2、不粘炒锅中火, 加2茶匙油, 下鸡丁翻炒至8层熟(图3), 盛出来待用.
3、锅里加2茶匙油, 放入麻辣锅酱1茶匙(图4), 葱花1大匙及蒜蓉1茶匙(图5), 大火炒10秒, 然后放入芹菜, 翻炒几下(图6).

4、然后放入4料, 继续炒约2分钟至芹菜断生(图7), 放入之前炒的鸡丁及1/2茶匙香油, 翻炒均匀, 鸡肉刚熟, 即可出锅.
