【凉拌黄瓜金针菇】

大热天，来盘凉拌菜，开胃爽口。
用料:
1：大黄瓜1条425克，盐1/2茶匙；
2：金针菇2包共400克；
3：红油1.5大匙，蒜蓉1大匙，葱花1大匙；
4：盐1/3茶匙，葡萄醋（balsamic vinegar ）或老陈醋2茶匙，糖1/3 茶匙，头抽酱油2茶匙， 鸡粉1/6茶匙，白胡椒1/6茶匙；
5：香油 1茶匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、黄瓜刨去皮（也克不去皮）洗净切丝，加上剩余1料，拌匀，静置20分钟（图1）。金针菇切去根洗净，烧开一锅水，将金针菇在开水里烫烫（图1），捞出后冲冷水沥水待用。
2、 不粘锅置炉上开中小火，加红油1.5茶匙，放入葱花蒜蓉炒1分钟至香味出来（图3），离火待用。
3、将黄瓜丝稍微挤去水，放一干净锅里，放入烫好的金针菇，放入红油炒过的葱花蒜蓉，及所有4和5料，拌匀即可上桌。
