【港式乳酪蛋糕】

很久没有做乳酪蛋糕，领导们馋了。今天做了这个港式乳酪蛋糕带去爬梯，非常受欢迎。比我以前做的做出完美的–【低脂轻乳酪蛋糕】面粉含量稍高，但是因为用了原味乳酪，味道更浓厚，口感非常柔软润湿。请注意为了带去爬梯，示意图中是两倍的量。
1：乳酪（Kraft PHILADELPHIA cream cheese）200g（图2），牛奶1/2杯（120克），牛油2大匙 （30克），白糖1/4杯（52克）；
2：蛋黄4个；
3：玉米淀粉（corn starch）1.5大匙（15克），低筋面粉（pastry flour）4大匙（40克）；
4：柠檬汁1茶匙；
5：蛋白4个，塔塔粉（cream of tartar）1/4茶匙或白醋1/2茶匙，糖3大匙（39克）；
其他；
6：7号圆形活动烤模。
注：1大匙Tablespoon=15毫升，1茶匙Teaspoon=5毫升，1杯Cup=240毫升。
做法：
1、将蛋黄蛋白分开，分别放入干净无水的盆里（图1）。
2、将所有1料放入一中号不粘锅里（图3），置炉上开中小火（电炉用3档），边搅拌边加热至融化（图4），再将蛋黄放入（图5），继续搅拌均匀离火。
3、将3料的玉米淀粉和低筋粉拌匀，分3次加入乳酪糊里（图6），每次都搅拌均匀。如果乳酪糊太稀的话，开小火继续搅拌至浓稠，但一定不能让其结块。搅拌均匀后离火。
4、将蛋黄乳酪糊倒入一大盆里，让其冷却（图7），然后加1茶匙柠檬汁拌匀。如果蛋黄乳酪糊还有些小颗粒，追求完美的话可以过筛待用。
7、如果用活动烤模的话，烤模底部的外面要包上锡箔以防进水！大号浅烤盘里倒入2厘米深的热水，放入烤箱内。烤箱设定为340F/170摄氏度，温度达到后再预热5分钟。将蛋糕烤模放在浅烤盘上水浴20分钟（图15），将温度降至290F/145摄氏度再继续水浴烤45-60分钟，用牙签插入试试，拿出是干净的即可。关火后将烤箱门打开一条缝，等10分钟再取出蛋糕。
8、蛋糕稍冷后将之翻转到铺有烤盘纸的案板上（图16），拿掉烤盘，小心撕去周边与底部的烤盘纸（图17）。然后将烤盘轻轻覆盖于蛋糕上，连蛋糕一起翻转180度。看看成品（图18），成功的话蛋糕表面应该是不裂的。盖上保鲜膜，放冰箱冷藏3小时后再切片食用。
1、加热牛奶和乳酪时，火千万不要太大，而且不停的搅拌。要有耐心，记住心急吃不得热豆腐。放入蛋黄和3料后，要继续不停的搅拌，至乳酪面糊有些浓稠，用搅拌器划圈，有纹路出现即可，千万不要煮熟了。
2、蛋白打发不能打硬，要不然蛋糕会开裂，蛋白打到倾斜盆还可缓慢移动即可。
3、打发好的蛋白和蛋黄糊翻拌时，要先将1/3打发的蛋白放入蛋黄糊里拌匀，使之轻盈些。然后再将蛋黄糊全部倒回剩余的蛋白中，用橡皮刀从上往下轻轻翻拌均匀，这一步是保证蛋糕细腻轻盈的关键。若是翻拌不得当，会造成蛋糕分层，乳酪沉积底部，烤制过程貌似永远烤不熟。
4、烤箱一定要提前预热20分钟，水浴的外盘盛热水后，放入烤箱一同预热，否则蛋糕放入冷水浴中，底部温度太低，影响成品质量。
