用料:
1：里脊肉（Pork loin）300克，盐1/3茶匙，生粉1.5茶匙，水1.5大匙，老抽酱油1茶匙；
2：雪豆160克，撕掉老筋，洗净切小段；
3：橄榄油2大匙，蒜蓉1大匙，豆豉1大匙斩蓉，姜丝1.5茶匙，葱花1大匙；
4：厨酒1茶匙，盐1/6 茶匙，水1.5大匙，糖1/2茶匙，蚝油1.5大匙；
5：香油1茶匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、里脊肉洗净沥水，切薄片，放入剩余的1料（图1），用手抓捏均匀（图2），静置20分钟。
2、开大火将不粘锅烧热（大约1-2分钟），加1大匙橄榄油，立即放入肉片快速划散（图3），炒至八成熟捞出待用。
3、原锅置炉上开大火，加1大匙橄榄油，炒香剩余的3料（图4）。放入雪豆片翻炒几下，再下4料里的厨酒和盐炒匀（图5），然后放入剩余的4料翻炒几下。
4、然后放入肉片（图6）翻炒均匀，最后下1茶匙香油，翻炒兜匀出锅。
