【酱汁豆腐蚕豆】

在Farm Boy买了带壳的蚕豆,剥出来的蚕豆仁好大个,原想会不会老了,结果几分钟就煮糯了,非常好吃。

用料:
1:老豆腐一盒700克;
2:蚕豆仁350克;
3:橄榄油2大匙,蒜蓉1大匙,葱花1.5大匙,姜蓉2茶匙;
4:厨酒1大匙,盐1/2茶匙,生抽酱油 2大匙,老抽酱油1.5大匙,鸡粉1/4茶匙,糖1茶匙,水2大匙;
5:香油1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、 豆腐冲洗后沥水,横剖成3等厚片,再对角切三角型待用。不粘锅加1.5大匙橄榄油,置炉上开大火,放入豆腐(图1)煎黄,翻转一面再煎黄(图2)捞出待用。
2、 原锅加0.5大匙橄榄油,大火炒香蒜蓉、葱花与姜蓉(图3),加蚕豆仁翻炒1分钟(图4),然后放入煎豆腐(图5).。

3、依次放入所有4料(图6),煮几分钟至汁浓、蚕豆仁软糯,最后淋下1茶匙香油,翻炒均匀后出锅。配上一碗米饭,很好吃。
