【凉拌藕片】

很难在这边买到上好的藕，这次买的还不错，藕身清甜多汁。家里来了几位客人，做了这个凉拌藕片，在各样荤素菜中，它很受欢迎。
1：藕2节740克去皮洗净，盐2/3茶匙;
2：干黑木耳10克，用水泡发后洗净待用，盐1/4茶匙；
3：橄榄油1大匙，花椒1茶匙，葱花1大匙，姜丝1茶匙；
4：葡萄醋（balsamic vinegar ）1.5茶匙，盐1/4茶匙，糖1/2茶匙，鸡粉1/4茶匙，红油1大匙，剁椒1大匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、藕去皮洗净对半切开后，切薄片（图1）。用一大锅注入大半锅水，置炉上开大火煮滚。下一半量的藕片（图2）烫30秒，捞出藕片放入盛八分满冷水的盆里（图3）。重复另一半藕片，沥水后将2/3茶匙的盐拌入藕片中（图5），放入冰箱冷藏2-3小时。
2、黑木耳也放入烫藕片的水锅中煮3-5分钟（图4），捞出冲冷水后沥水。将1/4茶匙的盐拌入煮好的黑木耳里（图6）,放入冰箱冷藏2-3小时。
4、将葱姜油倒入藕片上，放入黑木耳，及所有调味料4料（图9），拌匀后就可以上桌食用了。
