【抹茶凉粉】

天热了做碗凉粉吃,抹茶凉粉也很好吃。

用料:
1:纯绿豆淀粉1/2杯,抹茶粉1茶匙,水3.5杯;
2:牛油果油 1大匙或橄榄油1大匙,葱花1大匙,蒜蓉1大匙,豆豉1茶匙;
3:开水2大匙,辣椒酱1大匙,辣椒油1大匙,葡萄醋2茶匙,头抽酱油1大匙,糖1/2茶匙,生抽酱油1大匙, 鸡粉 1/4茶匙;
5:香油1大匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、中号饭锅,置炉上开大火,加入1料中水2.5杯,盖盖煮开。绿豆淀粉及抹茶粉(图1)加水1杯拌匀。调中火,边搅拌边倒入淀粉水(图2),搅拌煮开至半透明(图3),离火冷凉。

2、凉透的凉粉(6小时),用刀把周边划一圈倒扣在案板上(图4),倒出切细长条放入碗内。小号锅置炉上开中火,放入2料炒香(图5)关火。依次放入剩余3料及4料拌匀(图6)。
3、将调味汁浇到凉粉上拌匀即可。
