【老式鸡蛋糕】

就只有鸡蛋,面粉,糖和少许油鸡蛋味道比较重的老式蛋糕,让我想起小时候吃的那种油油鸡蛋糕。不过这个配方含油量很少。

1: 低筋粉1/2杯70克;
2:特大鸡蛋3个,
3:柠檬汁1大匙(可以不用),
4:糖5大匙(75克);
5:玉米油1大匙。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、鸡蛋和柠檬汁放一中号盆里(图1),另取一大盆放入小半盆热水,将盛鸡蛋的盆放入热水的大盆里,用打蛋器告诉打几分钟(图2),放入糖后继续打至浓稠轻盈(图3)。
2、将面粉过筛分3次放入打发的蛋液里(图4-5),用橡皮刀拌匀(图6)。将面糊分别装入6个中号的纸杯里(图7)。

3、纸杯放到一烤盘上(图8),将烤盘放入预热至340F/170C的烤箱内,烤22分钟左右拿出。
4、蛋糕装入密闭盒子里,等蛋糕冷透即可食用。
